Corn Dip
- 9” pie pan or similar baking dish
Ingredients
- Mexican Cheese Blend (3c)
- 2c Cheddar + 1c Jack, or buy the pre-shredded mexican blend
- Mayo (.5c)
- Whole corn (11oz can) - drained
- Diced green chiles (4oz can) - drained
- Chipotle Peppers in Adobo Sauce (2-3 tbs or to taste chopped fine)
- Garlic Powder 1/4 tsp (Optional — I rarely use it)
- 1 tomato, diced
- green onion 1/4 c chopped
- cilantro - 2-3 tbs chopped
- avocado 1 - cubed
Cook
- preheat oven to 350
- mix all dip ingredients in a mixing bowl
- load dip into pie pan
- bake at 350 for 25 minutes
- add toppings
Eat
Serve with tortilla chips and your favorite salsa.
